Coconut muffins with mango and oatmeal

These coconut muffins with mango can be easily frozen and with a dozen of these gluten free oatmeal based muffins you will make your colleagues very happy.

What do you need? 12 muffins
  • 500 ml coconut drink

  • 2 tablespoons of lemon juice

  • 400 gr of oatmeal

  • 2 tablespoons of sweetener

  • 50 grams coconut flakes

  • 1 mango

  • 16 gr of baking powder

  • 1 tsp baking soda

  • pinch of salt

How do you make this?
  1. Preheat the oven to 200°C.

  2. Grease a muffin tray with some baking spray or butter. 

  3. Remove the skin from the mango and cut it into 1cm cubes.

  4. Put all the dry ingredients (oatmeal, sweetener, coconut flakes, baking powder, baking soda and a pinch of salt) in a bowl and mix well. Add the lemon juice and coconut drink and stir together.

  5. Finally, add the mango into the oatmeal mixture.

  6. Divide the oatmeal mixture among the 12 muffin cups on your tray. 

  7. Bake at 200°C for 20-25 minutes.

  8. Cool in the pan, placed on a wire cooling rack, for 15 minutes. Remove muffins from the tray and serve warm or at room temperature.

Don't eat them all at once ;-)
